Rennet is a kind of natural biological enzyme which was isolated and purified from the immature fruit of natural Papaya by bioengineering technology. Its molecular weight is 36000 and belongs to the sparse group (- SH) enzyme. The use of rennet can effectively coagulate the components to produce fresh or short-term fermented mature cheese to make new cheese products, which greatly promotes the consumption of cheese by Chinese people, thus promoting the development of cheese industry.
