Cyclodextrin (CD) is a series of cyclic oligosaccharides produced by amylose under the action of cyclodextrin glucosyltransferase produced by Bacillus. It usually contains 6 ~ 12 D-glucopyranose units. Among them, the molecules with 6, 7 and 8 glucose units, alpha -, beta - and Gama cyclodextrin, have been studied more and have important practical significance. According to the results of X-ray diffraction, infrared spectrum and nuclear magnetic resonance spectrum analysis, it is confirmed that each d (+) - glucopyranose of cyclodextrin molecule is a chair conformation. All the glucose units were cyclized by 1,4-glycosidic bond. Because the glycosidic bond connecting the glucose unit cannot rotate freely, cyclodextrin is not a cylindrical molecule, but a slightly conical ring.
