Natamycin - nearly white or cream yellow crystalline powder. It is a kind of odorless, tasteless, low dose and high safety food preservative. Natamycin is a kind of white to milky white odorless and tasteless crystalline powder produced by Streptomyces natamycin controlled fermentation. It usually exists in enol structure. Its mechanism of action is to combine with ergosterol and other sterol groups of fungi to inhibit ergosterol biosynthesis, thus causing cell membrane distortion, eventually leading to leakage and cell death. 1.Food use
Natamycin is a natural, broad-spectrum, efficient and safe inhibitor of filamentous fungi such as yeasts and molds. It can not only inhibit fungi, but also prevent the production of mycotoxins. Natamycin is harmless to human body, it is difficult to be absorbed by human digestive tract, and microorganisms are difficult to produce resistance to natamycin. At the same time, because of its low solubility, natamycin is usually used for food surface preservation. Biological preservatives.
2.Medical use
Natamycin is used to treat fungal infections, including Candida, Aspergillus, Fusarium, etc., and also used as eye drops or oral medicine. In these applications, natamycin is less absorbed by human body. When taken orally, it is hardly absorbed from the gastrointestinal tract, so it is not suitable for systemic infection. Natamycin is also used in eye drops, and its 5% natamycin content is suitable for the treatment of fungal blepharitis, conjunctivitis and keratitis caused by microorganisms, including Fusarium Pythium keratitis.
1. Natamycin has been used for decades in the food industry as a hurdle to fungal outgrowth in dairy products and other foods.
(1) As an aqueous suspension (such as mixed into a brine) sprayed on the product or into which the product is dipped, or in powdered form (along with an anticaking agent such as cellulose) sprinkled on or mixed into the product.
(2) As a food additive, it has E number E235. Throughout the European Union, it is only approved as a surface preservative for certain cheese and dried sausage products.
