Trypsin is a kind of protease which is purified from pig pancreas by multiple crystallization, and further prepared by chromatography and ultrafiltration technology. It is composed of 223 amino acid residues, and its molecular weight is about 24000. It is widely used in the research and development, production and detection of biological and food industries.
