Chitosan is a linear polysaccharide composed of randomly distributed β-(1-4)-linked D-glucosamine (deacetylated unit) and N-acetyl-D-glucosamine (acetylated unit). It is made by treating shrimp and other crustacean shells with the alkali sodium hydroxide.Chitosan has a number of commercial and possible biomedical uses. It can be used in agriculture as a seed treatment and biopesticide, helping plants to fight off fungal infections. In winemaking it can be used as a fining agent, also helping to prevent spoilage. In industry, it can be used in a self-healing polyurethane paint coating. In medicine, it may be useful in bandages to reduce bleeding and as an antibacterial agent; it can also be used to help deliver drugs through the skin.More controversially, chitosan has been asserted to have use in limiting fat absorption, which would make it useful for dieting, but there is evidence against this. Other uses of chitosan that have been researched include use as a soluble dietary fiber.

Function & Application

1.Application in food industry
Chitosan can be used as adhesive, moisturizing agent, clarifying agent, filling agent, emulsifier, polishing agent and thickening stabilizer in food industry; as a functional oligosaccharide, it can reduce cholesterol, improve immunity, enhance disease resistance and infection resistance of the body, especially has strong anti-tumor effect. Because of its rich resources and high application value, it has been widely developed and used. Enzymatic or acid hydrolysis of shrimp or crab shell is often used to extract chitosan in industry.

 

2.Application in daily chemistry
Chitosan is nontoxic, tasteless and bacteriostatic. When it is mixed into cosmetics, it can improve the film-forming property of the product, has antibacterial and moisturizing functions, and does not cause any allergic reaction. For example, the hydroxypropyl trimethyl ammonium chloride can enhance the hydration ability of chitosan, improve its moisture absorption and moisture retention efficiency, and become a rich source and good performance cosmetics moisturizing material. 3.Application in pharmaceutical industry

4.Application in light industry
